Making your own Almond flour takes a few hours, but it can be much cheaper and its a lot fresher! It only takes one ingredient, its Gluten Free, Paleo, and Keto-friendly, easy to store, and delicious to bake with!
Yields: ~1 & 1/2 cups
How to use Almond Flour & Meal:
Almond flour is a popular ingredient in many bakes because it adds a beautiful richness and texture. Almonds are also high in fiber and protein, making almond flour a healthy substitute to regular flour in recipes. Its Gluten-free, Paleo, and with just 12 grams carbs per half a cup, its Keto-friendly! There are hundreds, maybe thousands of recipes out there using Almond flour & meal, so take your pick!
I love using a little bit of almond flour or meal with a regular Gluten Free flour blend in my gluten-free bakes because it helps give them a lighter and more moist texture that you sometimes miss in gluten-less products. I used this method in my Marzipan Linzer cookie recipe and it really made all the difference! The almond meal not only gave the cookies a sweet nuttiness, but it helped by soaking some of the butter in the recipe, keeping the cookies moist, crisp, and not too oily!
Homemade Almond flour is also great for making marzipan from scratch! It gives it a fresher richer taste & texture!
2 cups whole roasted almonds, unsalted.
3 cups boiling water
A food processor or blender
A flat large baking sheet
A heat-safe pot or bowl
1. In a metal pot or glass bowl, combine the almonds and boiling water and let soak for 30 minutes. Using boiling water speeds up this process, but you can use room temp water instead and soak them overnight.
2. Line a large baking sheet with parchment paper. With a small bowl or bag ready for trash, start peeling the almonds, one by one, discarding the skins into the bowl or bag and placing the peeled almonds on the lined baking tray.
3. Preheat the oven to 200 degrees Fahrenheit.
4. When all your almonds are peeled, bake them for 3o minutes to dry them out.
5. In a food processor or blender, pulse about half of the almonds until coarse. Add the other half and blend to your desired consistency.
6. Spread your flour or meal back out onto the lined baking sheet and bake at 200 degrees Fahrenheit for 30 minutes. Let cool and store in air-tight containers and enjoy in your favorite recipes!
