These oats are for when you're craving chocolate in the morning, but can't justify having that cake. Ultra chocolatey and decadent, this dessert in disguise is the perfect go-to breakfast you've been looking for! Throw everything in the blender, and after 12 minutes in an air fryer its ready to eat! This is the best healthy way to kick start your Monday or begin your relaxing Saturday!
Yields: 4 servings/4 ramekins
Store extra batter in a jar in the fridge for easy breakfast prep in the morning! It's literally as easy as pressing a button!
Top-8 allergen-free tip: For nut-free diets, in place of almond butter (or another nut butter) in this recipe, use sunflower seed butter, soy butter, or tahini!
If you don't have a blender or food processor, you can easily prepare this recipe by mashing your banana with a fork until it is smooth, and grinding your oats either in a coffee grinder, or by breaking them down in a ziplock bag with your hands or a mallet (I vote mallet if you're feeling the especial need to release some early-morning tension). You're aiming for a semi-coarse meal. Then simply combine all the ingredients in a bowl and viola!
If you're baking all your oats in one serving dish instead of individual servings, bake it for 20 minutes @350 in an air fryer, or 25 @350 in the oven!
For the Batter:
1 ripe banana
1 cup rolled/quick oats
3 Tbsps cocoa powder (I prefer Dutch)
1 tsp ground flaxseed
1/2 tsp baking powder
a pinch of salt
2 tbsps almond (or other nut/seed butter)
1 tbsp maple syrup
1/2 tsp vanilla extract
1 cup plant milk
~1/2 cup chocolate chunks or chips
Optional: 1/2 tsp espresso grounds
A blender or food processor (see Recipe Notes above for how to make this recipe without one)
Ramekins, or another oven-safe dish
An air fryer (preferred) or an oven.
1. In a blender or food processor, combine all the ingredients: your banana, oats, cocoa powder, ground flax, baking powder, salt, almond butter, maple syrup, vanilla extract, and plant milk. Blend until well combined, stopping while the oats are still semi-coarse.
2. Grease your ramekins and fill them halfway with batter. Sprinkle some chocolate chips or chunks, top with more batter, and top with more chocolate!
3. Bake the ramekins in the air fryer at 350 for 12 minutes, or in the oven for 18-20 minutes. Let cool 2 minutes and serve!
