These Matcha Tahini Tortoise Cookies are as delicious as they are adorable! They're vegan, gluten free, and protein packed! The nutty tahini makes for a moist and creamy texture that pairs so deliciously with the matcha! Healthy, fun to make, and not too sweet, these cookies are absolutely to die for!
Yields: ~18 Tortoises
When assembling the tortoises, I highly suggest measuring each part so ensure they're all the same time ans bake uniformly. For the shell, I used 1/2 tbsp matcha dough, for the head I used 1/4 tsp dough, and for the limbs and tail I used ~1/8 tsp dough.
I used sesame seeds to make 2 eyes on each turtle, but if you don't have black sesame seeds on hand or if you're allergic to them, you can just poke holes with a toothpick for eyes instead.
1 cup + 1 tsp gluten free measure-for measure flour
1/2 cup tahini
1/4 cup brown sugar
1/4 cup fine white sugar (or more brown sugar)
3 tbsps canola/veg/liquid coconut oil
1/2 tsp vanilla extract
1 tsp baking powder
2 tsps matcha powder
~1 tsp black sesame seeds (optional to make eyes)
1. In a medium sized bowl, combine he tahini, both sugars, oil, and vanilla extract.
2. Add the baking powder and 1 cup flour (being sure to reserve the 1 tsp for later and combine until it forms a slightly sticky dough.
3. Divide the dough into two bowls, 1/3 of it in one, and 2/3 of it in another. Remove 1 tbsp of the dough from the bowl that has less dough and place it in the bowl with more dough in it. This helps ensure you'll have the right ratio of dough to form your tortoises with.
4. Add the 2 tsps matcha powder to the larger portion of dough and the reserved 1 tsp flour to the smaller portion. Mix.
5. Cover the bowls with plastic wrap and let rest in the freezer for ~10 minutes. This will make the doughs a lot easier to work wit.
6. Line a baking sheet with parchment paper or a silicone baking mat and lightly grease it.
7. Assemble your tortoises using this guide. Keep in mind that if you make them a different size, you'll need to adjust the baking time:
8. Preheat your oven to 350 degrees Fahrenheit. Meanwhile, let your cookies rest in the freezer for 5-10 minutes.
9. Bake @350 for 10 minutes. Remove from oven, let cool, and enjoy!
